Smoked Sausage Gnocchi
Both smoked sausage and gnocchi is available at the supermarkets. All you need to do is prepare the gnocchi as directed in the package, drain the water and keep aside. Then cut the sausages into ½ inch pieces, put some oil in a large skillet, then put the sausages, julienned sun dried tomatoes, and a little minced garlic and heat them for about 5 minutes in medium heat. take a large bowl and beat eggs in it till it becomes smooth. Add some ricotta cheese and flour and stir till the mix becomes consistent. Add some orange zest and lime zest, butter, vanilla and splenda and mix well. Next heat oil in a skillet, take the mixture by tablespoon and put in the oil. Fry till both sides have become golden brown. Take them out of the oil, put on a paper napkin so that the excess oil is absorbed. Your Italian pancake is ready to be served with syrup of your choice.
